I’m Paul, a chef turned beekeeper.
After years of running my restaurant, Sheeps and Leeks, I wanted to reconnect with the source of great ingredients and explore the craft of beekeeping, something that had always fascinated me.
The Beginning of a Passion
I first decided to keep bees after many conversations with the local beekeeper who supplied his incredible honey to my restaurant. Every time he dropped off a few jars, we’d end up talking about bees — how they worked, the seasons, and the challenges.
He completely sparked my curiosity and would later become my mentor.

From Passion to Community
What started as a small hobby soon became a full-blown passion.
At The Honey Herd, every hive tells a story — from the wildflowers and clover fields of Anglesey to the careful, seasonal work that goes into each colony.
As our understanding of the beekeeping world deepened, so did our desire to share it.
We now work hand-in-hand with other beekeepers across Wales and the UK, sourcing exceptional, natural honeys and bee-based products from those whose values align with ours.
Together, we’re building a network that celebrates sustainability, craftsmanship, and respect for the bees.

As The Honey Herd has grown, so has our commitment to supporting others who care for bees.
Alongside producing our own honey, we nurture healthy colonies and provide nucleus hives for both new and experienced beekeepers.
Our honey is raw, unfiltered, and true to its origins — a reflection of the landscape and the bees that make it.
But The Honey Herd isn’t just about honey. It’s about living a little slower, paying attention to the world around us, and sharing that journey with others.
